She thinks she is being starved

My mother, who is nearly 100 yrs old, has TBI and dementia. Her long and short term memory is impacted. She resides in a locked memory unit.

An ongoing issue is she forgets she has eaten, hates nearly every dish (but usually eats everything), and regularly becomes extremely upset...claiming the staff are starving her.

I am receiving her irrate calls about the meals (and other complaints). She believes she isn't being fed. I cannot convince her that she has eaten. She is angry at me for not believing her.

Recommendations? I am fatigued by her vitriol.

    I'm thinking I should just simply say "No, you ate.", and hang up on her. I am not young myself and the constant stream of complaints is stressing me a great deal.

    I’m sorry you are going through that. It is good though that she still wants to eat . Maybe suggest they give her snacks between meals
