Why Does Sundowning Happen?

Hello! I'm so happy that I've found this group. I've noticed over the past few years that my grandmother always seemed much more confused at night when I'd talk to her. I originally thought that this was only due to her drinking, but I did some research and heard about sundowning. Why does sundowning happen? Is it just fatigue, or is it exasperated by her drinking Prosecco every night, or is it her being disoriented? She's undiagnosed which is absolutely maddening (neither of her kids can be bothered to take her to the dr), but I think she's stage 4 or 5 according to the FAST scale, if that helps.
