Soft Meals
Hello. We prepare soft food for my mom who has a hard time for chewing. Here are 2 questions for giving her nutritional yet tasty food. She loves Mexican food. Any recommendations for Hispanic food that can go into a blender that is also nutritional? Any ideas for meals for an individual who is bed bound, low muscle mass?
I want her to be happy.

If I'm thinking of soft Mexican food, my mind immediately goes to refried beans. Any beans, properly seasoned and put in the blender, can be refried beans. Tomatoes, pork, beef, rice, can all be added. I'd add corn tortilla from time to time, because even blended up corn tortillas keep their amazing flavor.
Queso, queso blanco, custards, pumpkin pie, rice pudding. Those are all good blended.
Supporting muscle mass means protein: beans and rice (together), cheese, meats.

I would try to layer the flavors. That's a wonderful thing about Mexican food: the layers. Puree seasoned rice, rice seasoned with cumin and tomatoes. On top of that spread refried beans. Then a layer of melted cheese. Guacamole if she likes that. A layer of cooked pureed tomatoes would also be nutritious. And like sandwich said, a layer of pureed baked tortilla would also be delicious. You could do a baked casserole like this, similar to a baked quesadilla casserole, which would give you several meals to give to her.
Another possibility is to bake these layers with a thin layer of yellow cornbread spread on top.

Get chicken or beef broth for mixing
Invest in a hand held blender that can fit into large coffee mugs or the like
Season/soften as you wish with table cream, salad dressings, sour cream...

I don't know how Mexican it is, but scrambled eggs with salsa is delicious (to me). Eggs digest almost completely with little poop, too, a nice thing for the bedridden.0
