Turkey pie

It is the season for Turkey pie

 

Turkey or chicken  pot pie

Ingredients

    1 egg  (for the crust

   ⅓ cup butter  (look at the stick)

    1 onion cut up small

    ⅓ cup flour

    ½ teaspoon poultry seasoning  plus slat and pepper to taste

    ½  teaspoon thyme

    1 cup chicken broth

    ⅔ cup milk I use evaporated milk which I dilute 1-1 with chicken broth
so I mix  1/3 cup evaporated milk with 1 1/3 cup chicken broth  

     1 potato  or smalll sweet potato cooked  diced

    1 ½ cups frozen vegetables defrosted (or use leftovers)

    2 cups leftover turkey or chicken cut up small  check for bones

    1 deep dish  pie crust  i.e. a bottom and a ad a pie crust top
top.    (deep dish)

 Instructions

    Preheat oven to 400°F. Whisk egg with 1 tablespoon water. If you have a basting brush it is very handy 

    In a big frying pan Cook the onion in butter over medium low heat for  about 5 minutes.
      Mix up the flour, poultry seasoning, thyme, salt & pepper.
     put it in and mix it up Cook 2 minutes more.  (this is making a roux)

 put milk and chicken broth together and pour it in slowly  while mixing   keep heat medium It will be a bit lumpy at first . Bring to a boil over medium heat, simmer 1 minute and remove from heat. Stir in the turkey and vegetables.

 Take the bottom crust  

Fill with turkey filling. top with second crust.  You can use a bottom or a rolled top both work  push edges to seal and cut a few slashes  to vent pie. Brush with egg mixture .

Put pie on cookie sheet in oven

Bake 40 minutes or until lightly browned and filling is bubbly.

    Cool for 10-15 minutes before cutting.

Notes   Potato can be cooked in the microwave.

    Where is the recipe? I  just made an apple crisp and brought it to the mc for dw and residents.

    I find myself increasingly frustrated with my spouse; I know, in my head, that the anger, horrible comments, etc. are due to Alzheimer's.  However, it is hard to deal with day after day.  Then, I feel guilty as, internally, I am mad or hurt. Most days, I don't like this person.  It is a wicked cycle.  Input as to how you have handled this.

    I hear you trm, in fact I could have written that. I am grateful for the fact mine can still do his own shower, toilet, dress himself but the mean attitude just drives a knife in my heart. I don’t know what to do either.

    Thanks Crushed when I get it done I'll post a picture. I never really was allowed in the kitchen, because I can burn water, but now if I want to eat li am practicing, the apple crisp is gonna be served shortly. I do mac and cheese from scratch if that's such a thing?

    I had turkey pot pic via the mc yesterday, they do home cooking here, but your pie got me wanting more.

    I hope to be able to do more, I want to work up to my dw cheese cake. 

    I want to say hi to Jeri welcome to the forum and we all learn together, trm yes it is horrible and very trying.

    My mother told me to learn how to cook and marry a Doctor, so I did .  
    DW could not cook a lick
    DWs mother found out I could cook and said

     " we have to keep him otherwise our daughter will starve 
     Cooked for DW ever since

    Great fun

    Crush: Thanks for sharing the recipe! Looks yummy.

    I can't cook in the kitchen any more. DH has developed some weird disposition whenever I'm in the kitchen..."don't use so much paper towel/dish soap... the kitchen is all messed up... who's going to clean up the kitchen... no! not another pot/pan/spoon/... " So I gave up. Hope this phase will pass soon. I can't keep eating restaurant food.

    Dio, could you use a crock pot? Maybe plug it in in a different room?

    Dio I totally get " tired of restaurant food" we ate out almost every day and had Waffles or Bagels everyday for breakfast. Now when I get invited to eat some home cooked food I don't say no.

    Crushed, thank you for that fine recipe. I made a copy and will definitely make it after Thanksgiving.  I usually enjoy cooking and baking, unless the day goes awry. Taking DH to a restaurant becomes too much of an ordeal.
