Cooking doesn’t get much easier

Super Easy Mexican Chicken

1 can cheddar cheese soup

1 can cream of chicken soup

1 can chicken breast small or large can (I don’t see much difference)

1 can Rotel tomatoes

1 small can diced green chilis

Flour tortillas

About 4 oz. Mexican cheese

Mix first 5 ingredients together

Lightly spray PAM in 8X8 or 9X9 baking dish

Fully cover bottom of dish with tortilla(s)

Cover tortilla(s) with mixture

Repeat last 2 steps until full

Top with Mexican cheese

Bake in preheated 350 degree oven about 30 minutes or until cheese is slightly browned

    Perfect timing. My husband was always the cook. Now it’s me, breakfast, lunch and dinner. Even I am tired of my menu options. This looks cozy and cheesy. Thanks for the recommendation.

    i make a similar casserole with ground turkey and chili and black beans along with the corn tortillas and other ingredients. I often add black olives too. It’s great because we have leftovers for a couple days.

    That sounds really good, Ed. Pantry cooking is easy and is often good. I like to buy "no salt added" canned veggies and mix them for vegetable soup, as in beans, corn, and tomatoes with lots of chili powder.

    Carl, I love pantry cooking when I haven’t been to the store and can’t think of what to make. Linguini and clams is another idea. Package of linguini, a can or two of whole baby clams, garlic and a good olive oil. Salt and pepper, a little basil if you like it or chopped parsley is nice. Parmesan cheese is another addition.

    That linguini and clams sounds really good!

    My MIL would work for hours making spaghetti sauce from raw tomatoes and such, and FIL would put catsup on it because it was so bland. I heard her express frustration once that my 30-minute sauce was better than hers despite being much easier. Mine consists of browned hamburger, and one can each of crushed tomatoes, condensed tomato soup, and mushroom pieces, seasoned to taste with garlic, basil, dried onions, and oregano. MIL never changed, though. She thought the value of anything was proportional to the amount of work that went into it. Karl Marx had the same idea, but I never shared that thought with her, because she would have been deeply offended.

    Mmmmmm I call this King Ranch chicken amd use corn tortillas. @Ed1937 yours sounds delish!
