Sweet and Sour Chicken

2 boneless chicken breasts

4 large bell peppers, sliced (I like to mix green and red)

1 can pineapple chunks in juice

1/2 cup low sodium soy sauce

1/2 cup white vinegar

1 tsp garlic powder

1 tsp onion powder

1 tsp sesame oil

Place chicken, peppers, and pineapple in slow cooker. Mix soy sauce, vinegar, and pineapple juice with onion and garlic powder. Pour liquid over chicken. Cook on low for 6 hours. Add sesame oil before serving. Serve over rice or noodles. Enough for 4-6 servings.

Easy and sort of healthy comfort food. It's one of my DH's favorites so we have it often.

    This one is easy. I know because I can do it.

    Crockpot pork chops:

    4 pork chops with bone

    1 pkg, onion soup mix

    1 can cream of celery soup

    1 packet dry pork gravy mix

    1 1/2 cups chicken broth/stock

    Place pork chops in crock pot

    Combine rest of ingredients

    Pour over pork chops

    Cook on low for 6 - 8 hours

    Serve with mashed potatoes, salad, and veggie

    Jeanne, a couple of questions - Is this a good candidate to put in small containers for freezing? And I don't have sesame oil. I may never use it again. Would leaving that out make a big difference in taste? I'm really kind of lost in the kitchen.

    I am definitely going to try the sweet and sour chicken.

    Here's a super easy one:

    Cover boneless chicken breast or thighs with a jar of your favorite salsa. 2 lbs chicken to 2 cups salsa is about right.

    Cook on low for 8 hours or on high for 4 hrs. Shred with forks and serve over rice. I like to add fresh cilantro and a squeeze of lime once cooked. Avocado on the side.

    I have never tried freezing it, but maybe test with a small amount to see how it does.

    You can definitely skip the sesame oil. But if you want to give it a try, it's about $4 for a small bottle at my regular grocery and I also use it when I make stir-fry. It gives it a little of that traditional Asian flavor. Never tried freezing it but I would think it works. We usually just have it twice in the week I make it.

    Ps just noticed a typo. 1 tsp not tbsp of the sesame oil. A little goes a long way.

    This is a great area! I need some quick and easy recipes. I make what I call unstructured chicken stew. Using a small crockpot, I put in a large potato that has been quartered, some frozen peas and carrots, and two boneless skinless chicken thighs. Next, I mix up about a half a cup of chicken bullion. I like the better than bullion brand myself. I sprinkle some onion powder into the bullion, and then pour the whole thing over the mixture in the crockpot. I put on early in the morning and by noon we have a lovely meal. I serve it in bowls.

    Jeanne, when I’ve waited til the last minute, I often make a similar recipe on the stovetop with ground turkey. I don’t add vinegar but do use the pineapple chunks and other items. Ed, sesame seed oil gives any recipe a unique flavor. I use it in lots of dishes. A medium bottle lasts for months. You only need a few drops.

    Tried a new one tonight.

    Easy tortellini soup

    32 Oz container of low sodium chicken broth

    20 small frozen turkey meatballs

    2 cups diced carrots

    1 diced potato (gives the broth a little body)

    1 small diced onion

    1 cup chopped spinach

    A few handfuls of frozen cheese tortellini

    A couple of shakes of oregano, basil, garlic powder

    Everything into the slow cooker except spinach and tortellini. Cook on high for 3 hours. Add tortellini and spinach and cook another half hour.

    4 servings. Can easily be put in the fridge for a couple of days or frozen, but plan to add extra broth when you reheat because the pasta absorbs a lot of liquid.

    My DH'S review: it was perfectly fine 🙂

    Easy pasta in the Crockpot:

    Add one jar of pasta sauce (alfredo, marinara etc) and one jar full of water to pot

    Add a protein such as cubed chicken, ground beef, frozen meatballs etc

    Cook on high 3-4 hours or until meat is cooked through (depending on size, frozen etc.)

    Add uncooked pasta such as Penne or Bowties (I find the brand Barilla works well)

    Cook 45 minutes, stir once or twice.

    Top with cheese right before serving.


    Chicken Tacos (or modify for soup)

    Add 3-4 raw chicken breasts, a dash of salt, and a jar of salsa to crockpot.

    Cook on high for 3 hours or low for 4-6 hours

    Shred chicken with forks when tender.

    Either serve in tortillas as tacos, or if a soup is desired add add broth at the beginning (either prepared or water + bouillon cubes.) During the last hour of cooking the soup I add tomatoes, canned black beans, scallion, whatever is lying around. Sometimes some rice to make it a bit heftier and a little sour cream at the very end. The white rice cooks in about 30 minutes in the already hot crock pot.

    Here’s my favorite easy recipe. It freezes well. I put enough for a meal for DH and me into a Pyrex bowl and freeze.

    A few more words on sesame oil-I'm a fan. It's the perfect oil for frying salmon, green beans, egg rolls, etc. It adds a distinct and delicious flavor when used for frying. Green beans sauted in sesame oil with garlic and soy sauce are delicious! Makes a great salad dressing with rice wine vinegar, soy and ginger. It adds a lot of flavor to many foods. It should be stored in the fridge (unlike other oils) so it keeps forever.

    I think I can probably say with some certainty that I'm the worst cook on the site. But there is one meal I can make that is good. 😊 Super easy!! Don't let the fact that I'm a terrible cook stop you from trying this one.

    You can also use an Instant Pot which does slow cooker BUT you want to put instant pot on MED heat when in slow cooker mode which is equivalent to the Low on a real crock pot. If you use instant pot’s low it won’t get hot enough.

    also, if you’re going to use your instant pot for slow cooking, I would order the slow cooker, glass lid, which sits on top since you wouldn’t be using the pressure cooker lid in that mode

    Another note on sesame oil. If you’re making a hummus dip (can of garbanzo beans, a little oive oil, garlic, lemon juice salt and tahini) and you don’t have any tahini in the house, you can use a sprinkle of sesame oil instead.
