Any suggestions/tips on ways for me to capture and preserve what we have left before it’s too late? Videos or recordings is what I’m thinking of doing. What questions would you recommend I ask her? Is it worth looking at old photos/historical family albums to see if she is able to give us any insight into our family history? Thank you.

Yes--just be aware that if she's in a later stage she may mix her memories up. I had mom go through old photos and write who the people weren on the back, and recorded her identifying family keepsakes and Christmas ornaments. Videotaping holidays or just regular conversations about family is nice.
