Key lime dessert

DW is on hospice She can only eat food of a pudding consistency I make key lime pie filling for DW in little aluminum cupcake cups. It is just egg yolks condensed milk and lime juice I add green food coloring since that helps me mix it thoroughly. I use aluminum cups with lids since i take 4 at a time to the memory care

1 cup key lime juice

2 cands condensed milk 14 oz

yolks of 5 eggs

green food coloring if you are Irish (O'Key lime pie :-) )

12 minutes at 350 in aluminum cupcake or muffin cups (amazoon)

    I have missed your recipes ! Thank you for sharing. This has been a long journey for your DW. I hope hospice is the support it is meant to be for you DW, you and your adult children.

    Is this the recipe you use for your pie? graham cracker crust? Aluminum tins with lids…interesting

    Crushed - my husband is at the same stage food-wise. This sounds like something he'd enjoy. Thanks for sharing.

    I've been wondering how you and your wife are doing. I miss hearing from you here. Your journey is one of the only ones I know that have gone on longer than mine.

    She cant eat crust or lime fragments but otherwise yes

    sweetened condensed milk is loaded with sugar, some people confuse it with evaporated milk
